2012 Multiple-serotype Salmonella Outbreaks in Two State Prisons - Arkansas

More than 528 inmates and staff at two Arkansas state prisons in August 2012. One of the prisons was identified as the Arkansas Department of Correction's Tucker Unit. Approximately 351 inmates and staff were ill at the Tucker Unit. Results from an investigation at this facility identified chicken salad as the most likely vehicle. At prison "B" (not identified), investigators identified person-to-person transmission and contamination of multiple foods as the likely sources of illness. Analysis of stool samples from inmates identified eight serotypes and 15 PFGE patterns of Salmonella. Isolates of Salmonella from eggs produced at prison B matched two outbreak patterns. Sanitarians identified problems with food preparation, hand washing, and food safety training. Laboratory analysis identified 8 Salmonella species (S. Adelaide, S. Anatum, S. Braenderup, S. Cerro, S. Heidelberg,S. Litchfield, S. Mbandaka, and S. Newport).
