An outbreak of E. coli O157:H7 occurred among patrons of the Hoss Family Steak and Sea House Restaurants in Pennsylvania. the central plant of HFX, Inc., prepared the beef for this Pennsylvania restaurant chain and appeared to be the source of the beef's contamination. The steaks that were recalled were those that had been tenderized or injected with solutions to enhance flavor. The process likely transferred contamination from the surface of the steaks to the inside of the steaks. The company distributed product to restaurants in Pennsylvania, Virginia, West Virginia, however illnesses were known only to have occurred in the Hoss Family Steak and Sea House Restaurants in Pennsylvania.
