Roast Pork and Carnitas 2001

In mid July 18, the New York City Health Department received a report of Salmonella Uganda in a person who attended a wedding reception on July 14. Another wedding attendee was subsequently found to be infected with this rare strain of Salmonella. A total of eleven cases were ultimately detected. Consumption of roast pork served by a restaurant at the wedding reception was statistically associated with illness. A leftover sample of pork was tested and was found to be contaminated with Salmonella Uganda. The pork had been held at inadequate temperatures, and the inspectors found potential areas for cross-contamination. In August and September, twelve cases of Salmonella Uganda occurred in Chicago. All twelve persons had eaten carnitas, fried pork, in the three days prior to illness onset. These persons had purchased the pork at a grocery store or through a mobile lunch truck. The grocery store inspection revealed improper temperature holding and cross-contamination potential. One butcher was infected with Salmonella Uganda. He frequently ate carnitas made at the grocery store. The source of the carnitas from the mobile lunch truck could not be verified. The pork from the New York City and Chicago outbreaks was traced to two separate distributors. A traceback to the packing plant and farm source was not conducted. The Centers for Disease Control noted a total of 96 cases of Salmonella Uganda in 2001; this was the highest number of reports of this strain during the previous ten years.
